About assembling this piece; Bars should be about 2 feet long. Place bars into each other and drill a series of holes starting 3 inches from bottom and make holes about 1 inch apart. A 2x72belt has 144 sq. inches of surface, while a 1x42 is of course only 42 sq. inches of surface. So you're getting more than 3 times the abrasive for usually roughly 40%-75% more cost.

First, that's only 250w, so it's not a super powerful motor anyways. I'd look for something in the 500w+ range, preferably over 750w. You can do it with a smaller motor, but it takes forever compared to a nice powerful sander/grinder. It'll be dangerous as fuck, but probably cheap.

Most who are making knives really appreciate the veriable speed obtained by using a VFD and the multi wheel type grinder as oppossed to a Grizzly, Coote, Kalamazo or other 2 wheel grinder. My guess on the grinder is the bearings. The two getting hot are the hard angle wheels so they are going to have more direct pressure on their bearings. If they are getting to hot to touch, they will not last long. Learn to use a hammer and you won't need a stinkin' grinder! (I'm still learning)
